Yesterday was the summer solstice, and boy did it come in with a bang. If the last few days are any indication, it looks like we are in for a hot, steamy summer. While warm sunny days call for barbecues and potlucks outside, it’s also a good time to eat light summer lunches. Who wants to be weighed down in all that heat, after all?
