My trip recap of Cambodia and Vietnam - Recipes for Short Ribs with Sweet Potato Mash, One Pot French Onion Chicken, Roasted Delicata Squash Salad, and 🏈 🏈 game day favorites like sloppy joe sliders
As you read this, I am arriving home, having gained a day of travel back from Vietnam. Once again, we took an extra day through Tokyo, staying at the lovely Kimpton hotel in Shibuya, Japan. When you cross the International dateline, you technically "gain a day" because you cross the International Date Line westward, which means you essentially experience the same day twice. I love the idea of doing over the day when traveling. I anticipate I will have some jet lag. The key to getting over jet lag is to adjust to your local schedule as soon as possible. Spend time outdoors in sunlight (Hello Minnesota Sun?) and do your best to stay awake until nighttime. The sun regulates your body's circadian rhythm, so time in the sun is key to settling, they say. Wish me luck with that!
Here are some more trip observations, and I have an epic story, written by my husband Kurt, for next week about our fellow French 🇫🇷 passengers on the boat. You can also tune into The Jason Show on Tuesday, where I will share more stories and some Big Game Wing Tech!
If you want to join me on my next trip, it will be in October - in Sicily with Defined Destinations.
