What I am Cooking:
I have not cooked in 10 days, but I have been eating delicious food made by our housekeeper in Mexico, Soccoro. We start the day with fruit, yogurt, and fresh juice; some days, we swap out breakfast for lunch. My aunt Karen caught a 40 lb Dorado, so we had a party where we shared the fish with our neighbors, the house staff, and their families. The preparation was simple - Butter, rosemary, and garlic cloves as a marinade, and then the fish was baked. It looked easy, tasted delicious, and reminded me that I should be cooking more fish.
