


For some reason, the first signs of spring get me thinking about sweet and tart lemon cakes and I’ve got plenty of recipes that fit the bill. There’s everything from lemon ricotta cake to Meyer lemon-olive oil cake to citrus upside-down cake and lemon-blueberry or -blackberry cake.
If cake isn’t quite your thing, I also have easy lemon bars, lemon cheesecake, and lemon meringue pie. Whatever you choose, I think lemon is the perfect flavor for spring.
